Freezer meal for postpartum

This recipe is all about nourishment combined with convenience. I had a few ideas about that I wanted to include for this recipe but it really ended up being what handy, tasty goodness I had in my pantry! You will see from the ingredient list how much great nutrition is packed into this little bar. Feel free to make changes, it’s the kind of recipe where not too much can go wrong- it’s fast, easy and no baking involved!

The mix would also work really well as an energy ball if preferable and if you have more time to roll each one.

INGREDIENTS

  • ½ Cup Walnuts

  • ½ Cup Brazil Nuts… or use 1 cup of any nuts you like or want to mix!

  • 1/3 Cup Chia Seeds

  • 1/3 Cup Flaxseed

  • 1/3 Cup Milled Hemp Seeds

  • ¼ cup Cocoa Nibs….to add a bit of extra crunch

  • ¼ cup Shredded Coconut

  • ¾ Cup Pumpkin Seeds

  • 1/3 cup Sunflower Seeds

  • ½ cup mixed dried berries – any dried fruit you like

  • 1 cup Dates (may need to soak in warm water for an hour if they are hard and need a little softening.

  • 2 tbsp melted Coconut Oil

  • 3 tbsp Nut Butter….I used sunflower seed butter.

 

METHOD

Roughly chop the nuts in the food processor, then add all the other ingredients and whizzed it together for a minute until nicely combined. I then used my baking tray, lined with parchment paper and spread the mix out onto. Press down firmly- you can use a large spoon or large spatula to help flatten it out and level it a little. Once pressed firmly onto the tray, place tray into the refrigerator for 1 hour or the freezer for 30 min. to allow to set before slicing.

 

** The raw chocolate drizzle is optional, depending if you like a little extra sweetness or are a bit of a chocoholic like myself

  • 4 tbsp Melted Coconut Oil

  • 2 TBSP Liquid sweetener…such as Maple Syrup, Agave, Coconut Nectar

  • 3 TBSP Raw Cocoa Powder

  • 1 tsp Vanilla Extract

  • 1 tsp Cinnamon is optional

Mix together in a bowl until smooth, place in pouring bottle and then chill in the fridge for 10 min (no longer as it will harden too much) the idea is just to thicken a little. Then drizzle across the bars anyway you like!
